Ingredients:
1 Tbsp Nature’s Agave amber agave nectar
1 Tbsp Dijon mustard
1 Tbsp Shallots-minced
1 Tbsp fresh Thyme Leaves
1/4 cup high quality sherry vinegar
2 Tbsp extra-virgin olive oil
2 Tbsp canola oil
2 Tbsp hazelnut oil
1 teaspoon salt
1/4 Teaspoon black pepper
2 Tbsp chopped toasted hazelnuts
Directions:
1. Add agave, Dijon, thyme & sherry vinegar to a medium size mixing bowl and whisk all ingredients together well.
2. When mixture of previous ingredients start to bubble, add slowly, a few drops at a time at first (in order to form an emulsion) the extra-virgin olive oil and then the canola oil and then the hazelnut oil, slowly increasing to a stream as you go along.
3. Season with salt and pepper.

Ohhh yeah! I love this recipe. Tried it tonight and my friends were blown away at the taste and they couldn’t believe that it was low glycemic and gluten free.
