1. Chocolate Banana Cream Pie
This pie is decadent without being indulgent. Using tofu instead of rich cream, you’ll get your sweet tooth fixing on a desert that doesn’t break your calorie bank!
Preparation Time: 10 minutes
Cooking Time: 30 Minutes
Servings: 8. Each serving: 1/8 pie.
Ingredients:
1 box (12 oz) firm organic silken tofu
1/2 cup organic cocoa powder (non-alkaline)
1/3 cup raw agave nectar
1 Tbsp vanilla extract
3 ripe organic bananas
1 graham pie crust:
- 1 cup organic graham crumbs
- 1 organic cereal bar

Directions:
Graham pie crust:
1 cup organic graham crumbs
1 organic cereal bar
Grind crumbs and cereal bar together in food processor. Spray pie pan with cooking oil then pack crumbs into pan.
Preheat the oven to 325ºF. Place the tofu, cocoa powder, agave nectar, vanilla and bananas into a blender or food processor and blend until smooth. Pour into the graham crust and place in the center of the oven. Bake until firm in the center, about 30 minutes. Chill thoroughly before serving, about 3 hours.
Serving suggestion: Serve with a few slices of banana and a dollop of organic whipping cream on top.

2. Gingersnap Pumpkin Pecan Pie
Nothing smells more seasonal than pumpkin spices. This recipe is rich with flavor and texture – a great way to round off your family meal.
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Servings: 8. Each serving: 5.25 oz.
Ingredients:
12 gingersnap cookies
1 organic cereal bar
1-16 ounce can organic pumpkin
1/2 cup egg whites
1/3 cup raw agave nectar
1 tablespoon pumpkin pie spice
12-ounce can evaporated skim milk
2 tablespoons pecan pieces

Directions:
Preheat oven to 325º. Lightly spray a glass 9-inch pie pan with oil.
Combine gingersnaps and cereal bars in blender or food processor. Pulse until fine. Form the crust by lining the pie pan with crumbs but not all the way to the top edge.
Combine the rest of the ingredients in a medium-sized mixing bowl. Pour into crust, going over the edge of the crust slightly.
Bake in the bottom of the oven until a toothpick inserted in center comes out clean, about 30-40 minutes.
Sprinkle the top with the pecan pieces the last 10 minutes of baking.
Allow to cool slightly. Cut into 8 wedges and serve warm.

3. Deep Dish Apple Cranberry Pie
Apple pie is a traditional holiday favorite. This organic recipe adds cranberry to the sweetness.
Preparation Time: 10 minutes
Cooking Time: 60 minutes
Servings: 12
Ingredients:
4 large organic apples, peeled, cored and sliced
2-1/2 cups organic cranberries, fresh or frozen
1/2 cup raw agave nectar
1/4 cup 100% organic unbleached all-purpose flour
1 tsp apple pie spice
1 prepared organic pie crust

Directions:
Stir all ingredients together in a medium sized mixing bowl and place in a 10-inch deep-dish pie pan. Place one pie crust on top of the fruits. Cut 3 or 4 slits to allow the steam to escape. Bake at 350 degrees for about an hour. Serve warm with a slice of pie crust over top of the fruit. Refrigerate any leftovers.
