Cajun Red Beans and Rice

Preparation Time: 5 minutes.

Cooking Time: 25 minutes.

Servings: 4. Each serving: 1.5 cups.

Ingredients:

1 cup long grain organic brown rice
15-ounce can organic kidney beans, drained
1 cup canned, crushed organic tomatoes
1/2 cup organic onion, diced
1 organic green bell pepper, diced
2 bay leaves
2 cups water
2 tsp paprika
1 tsp Worcestershire sauce
1/8 teaspoon pinch cayenne pepper
1/2 tsp garlic powder
4 tablespoon chopped organic green onion (garnish)

Directions:

Place all ingredients for red beans and rice (except green onion) in a large sauce pan, cover and bring to a boil.
Reduce to a simmer and cook 15-20 minutes or until rice is tender and liquid is evaporated. Top each portion with 1 tablespoon of chopped green onion.
