Fettuccine with Salmon and Tomatoes

Preparation Time: 10 minutes.
Cooking Time: 10 minutes.
Servings: 4. Each serving: 1.5 cups.
Ingredients:
8 oz dry whole wheat Fettuccine pasta
2 tsp pure olive oil
2 tsp minced organic garlic
3 cups seeded, chopped organic tomatoes (3 medium)
1 7-oz can wild salmon (with bones for more calcium, or boneless)
2 tsp dry dill weed
1/4 cup organic shredded Parmesan cheese
1/4 cup organic unsweetened soy milk

Directions:
Cook Fettuccine according to package directions; drain in colander and reserve. Meanwhile, make the sauce. Heat a large nonstick skillet over medium-high heat, and add the olive oil. Saute the garlic until golden brown (about 1 minute). Add the tomatoes and briefly saute. Add the rest of the ingredients and cook until thoroughly heated. Toss with cooked pasta and serve hot.
