This week’s featured recipe: Organic Apple Broccoli Waldorf Salad
Recommended because: This salad provides well-balanced fuel: as a great source of vitamin C and Vitamin A; a good source of protein; and high in anti-oxidants, calcium (for stronger bones), fiber, and essential fatty acids.

As many ingredients as possible should be organic.
2 red organic apples, diced with peel on
2 cups raw organic broccoli florets
2 tablespoons chopped green onion
2 tablespoons chopped walnuts
1/4 cup organic raisins
1/2 cup organic low fat vanilla yogurt
Mix all ingredients together and refrigerate until ready to serve. It looks nice when served on a bed of lettuce with a pinch of ground cinnamon on top.
