Zesty Sweet Potato Latke Muffins
For those who celebrate Hanukkah! Here's a delicious latke style muffin for you to try. A well balanced snack with an immune boost!
2 pounds organic sweet potatoes, peeled
1 cup chopped onion
1/2 cup dried unsulphured cranberries
3/4 cup organic liquid egg whites
1 teaspoon salt
1/2 teaspoon ground white pepper
1/2 cup organic all-purpose flour
1/4 cup organic safflower oil
organic vegetable oil cooking spray
Preheat your oven to 375 degrees. Finely grate the sweet potatoes using a food processor or finely meshed grater. Place the sweet potatoes, onion, cranberries, egg whites, seasonings, flour and oil in a large bowl and stir well to mix all the ingredients together. Set aside. Spray muffin cups generously with organic cooking spray Divide the mixture among the cups (fill up to the top) and bake for about 45 minutes, or until the muffins are cooked through. Serve warm with organic unsweetened applesauce to dip the muffin in, if desired. ENJOY!
